Description:
A quick and healthy dinner thats also nice enough for a dinner party
Ingredients:
Fresh Salmon fillets ( boneless)
Potatoes
Julienne: carrots, cucumber, red cabbage
Brocollini: trim ends and cut in half
Teryaki marinade
Fresh ginger: finely shredded
Lemon
Olive oil
Butter
Salt
Directions:
Wash and dry salmon fillets
Place in shallow dish and coat in teryaki marinade and freshly shredded ginger ( just a handful).
Leave to marinade for 2 hours
Meanwhile dice potato into 2cm cubes and cook in microwave until soft but firm
Heat a deep pot with a splash of olive oil. Add cooked potato and toss quickly, season with salt.
Add broccolini and put on lid for 1 minute to lightly steam. Leave lid on and turn off heat.
Heat a frypan with generous olive oil until "hot". Add salmon fillets ( pan will spit so if you have a grease cover use it!)Cook skin side first to crisp. Fish should only take a couple of minutes each side. Whilst resting fish, add julliene veg mix to potato mix. Put back on heat and lightly stir fry. Just before serving squeeze in the juice of half a lemon.
Serve fish on vegie mix and top with a homemade hollandaise sauce
Hollandaise:
4 egg yolks
40 grams melted butter
Dijonaisse mustard
Place egg yolks in a steel bowl. Over a low flame:you may need a teatowel to hold the side of the bowl as it will get hot!) stirrring constantly ( if you dont stir quickly enough the egg will cook and stick to the bowl). Occossionally remove the bowl from the heat so as not to "cook" the egg yolk.
Once the egg mix has started to thicken slowly add the melted butter: stirring occasionally over the heat.
Add a heaped teaspoon of the mustard to taste and stir in. Serve immediately: YUM
This is also great served on bacon and eggs!
